ETI 231-011 is the Thermapen Sous Vide Thermometer, fitted with a miniature needle probe that has a Ø1.1 mm tip. The fine tip suits delicate foods and vacuum-packed items, and the thermometer reaches temperature in about three seconds across a -49.9 to 299.9 °C range with ±0.4 °C accuracy.
