The Digi-Stem DST600 and DST640 (dst600_640) are RTD meters designed mainly as retort thermometers for low acid canned food processing; probes are built to order and sold separately. They meet FDA 21 CFR Part 113 requirements for replacing mercury-in-glass retort thermometers, are USDA accepted under 9CFR318.305 and 9CFR381.305, and continuously self-check, showing "Err" if out of tolerance. The DST640 adds a laser welded stainless H frame for extra protection against RF interference and moisture.
